Inexpensive, farm raised (and thus not contributing to strip mining the sea beds and oceans), the tilapia is incredibly low in fat and calories, making it a smart meal for anybody watching their weight. But the ones you'll be eating are more likely small and easily cooked. It's a delicate white fish, in that its flavor is subtle, allowing you to broil it with your favorite spices and herbs.
